Some delicious recipes

Panzella with Poached Egg, Grilled Peach & Smoked Duck Breast

Ingredients for 4 people:

  • 1 ciabatta
  • 200g lamb’s lettuce
  • ½ bunch of basil
  • 4 eggs
  • 2 tbsp raspberry vinegar
  • 1 tbsp honey
  • 150g smoked duck breast
  • 200g cherry tomatoes
  • 2 peaches
  • 1 tbsp vinegar
  • 4 tbsp olive oil
  • Salt & pepper

Preparation

  1. Preheat the oven to 200°C. Cut the bread into large pieces. Place them on a baking sheet. Drizzle with olive oil and grill until crispy and golden brown.
  2. Halve the peaches and cut each half into 4 slices. Toss the peach slices in some olive oil and grill them on a hot grill.
  3. Rinse and halve the cherry tomatoes. Make a vinaigrette with the raspberry vinegar, honey, and olive oil. Season with salt and pepper.
  4. Bring water with vinegar to a boil. Crack an egg into a bowl. Create a whirlpool in the water with a spoon, reduce the heat slightly, and gently slide the egg into the water with vinegar in the center. Poach gently for 4 minutes. Repeat with the remaining eggs.
  5. Assemble the salad with the lamb’s lettuce, cherry tomatoes, and grilled peach slices. Top with smoked duck breast and dress with the vinaigrette, pieces of bread, poached egg, and some basil leaves.

Tagliata with Grilled Peach, Feta, and Nuts

Ingredients for 4 people:

  • 4 steaks
  • 3 peaches
  • 200g cherry tomatoes
  • 2 tbsp tarragon
  • 100g arugula
  • 1 red onion
  • 200g feta cheese
  • 3 tbsp almonds
  • Olive oil
  • Salt & pepper
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • ½ tsp mustard

Preparation

  1. Prepare the vinaigrette. Mix the olive oil with lemon juice and mustard, season with salt and pepper. Halve the cherry tomatoes and place them in a bowl along with the arugula and tarragon. Drizzle with the vinaigrette.
  2. Brush both sides of the meat and peach slices with olive oil and grill them for 2 to 3 minutes on each side on the barbecue (slightly less time for the peaches). Season with salt and pepper. Let the meat rest for 5 minutes under aluminum foil, then slice it thinly.
  3. Peel the red onion and slice into rings. Arrange the slices of meat and grilled peach on top of the cherry tomato salad. Finish with crumbled feta cheese, red onion, and roasted almonds.
